Recipe: Green Farm Meatballs with a roasted tomato base

As with anything you eat, the quality of the food has an impact not only on your health, but on how you feel. Our Green Farm Meatballs are no different.


We make our Green Farm Meatballs from our 100% pasture fed beef mince and honestly, once you have tasted quality organic meat like this, you won't want to settle for anything less.


Our Green Farm Meatballs are incredibly popular, so this month we're letting you in on our recipe, so you can have a go at making them yourself.


Ingredients
  • Green Farm 100% pasture-fed beef mince

  • Finely chopped onions (to suit your taste)

  • Mixed herbs (a good sprinkling)

  • Cornflour (just a little, for binding the mixture)

  • Salt (to taste)


Method
  • Put the ingredients in a large mixing bow and mix well by hand.

  • Shape the mixture into golf ball sized balls

  • Roast in a fan oven (set at 220) for 15 minutes


We love to serve Green Farm Meatballs to our guests with a roasted tomato base, which is again made from organic farm-fresh ingredients.


Ingredients
  • Tomatoes

  • Salt

  • Olive Oil

  • Onion

  • Garlic

  • Oregano

  • Tomato Puree


Method
  • Halve the tomatoes and place them on a roasting pan

  • Sprinkle the tomatoes with a light covering of salt and olive oil to taste.

  • We roast the tomatoes in our Aga for 90 minutes, and suggest that for a regular oven you try roasting at 180 degrees.

  • While the tomatoes are roasting, finely chop the onion and gently soften it in a little olive oil for an hour.

  • Towards the end of this hour, add a little chopped garlic so this too softens with the onion.

  • Combine the roasted tomatoes with the onion and garlic mix. You might also like to add a little oregano and tomato puree at this stage.

  • Simmer and reduce the mixture to a wet paste.
